Roasted Cod Fillets with Mushy Peas
Serves 2 Ingredients: Method:
2 cod fillets, boneless & skinless
Parsley & Thyme, chopped
1 clove garlic, crushed
2 fresh tomatoes, chopped
Olive oil, drizzle
1 tin x Batchelors Mushy Peas 420g
Place 2 cod fillets in an oven-proof dish. Sprinkle with parsley, thyme and crushed garlic. Add chopped tomatoes. Drizzle with olive oil and roast in a pre-heated oven for 15-20 minutes at 190C/375F. Serve on top of a generous dollop of Batchelors Mushy Peas.
