Courgette & Marrowfat Peas Stir-Fry
Serves 2 Ingredients: Method:
1 small onion, chopped
Olive oil, drizzle
1 clove garlic, crushed
1 courgette, chopped
1 handful of breadcrumbs
1 tin x Batchelors Marrowfat Peas 420g
1 tbsp pine nuts (optional)
Lemon juice (optional)
Parsley, chopped (optional)
Saute onion in olive oil until soft. Add garlic, chopped courgette and breadcrumbs. Drain Batchelors Marrowfat Peas and add them. Stir-fry until courgettes and breadcrumbs are lightly browned. If desired, add pine nuts, some lemon juice and chopped parsley to taste. Serve hot!
