Chilli Con Carne
Serves 3-4 Cooking time: 40 minutes Ingredients: Method:
1lb minced beef
2 tbsp oil
1 tin x Batchelors Red Kidney Beans 400g, drained
1 can x Lustre Chopped Tomatoes 400g
1 onion, chopped
½ tsp chilli powder (mild or hot, depending on your taste)
½ tsp paprika
1 garlic clove, crushed
1 tbsp dark brown sugar
½ pint stock (vegetable or beef)
salt and pepper, to season
soured cream or crème fraîche, to serve
Brown the mince in some oil for approximately 10 minutes. Drain excess juices and set aside.
Saute onion, spices and sugar in remaining oil for 8-10 minutes until golden. Place meat back in the pan and add tomatoes, garlic, stock and Batchelors Red Kidney Beans. Season with salt and pepper. Bring to the boil, reduce the heat and simmer on low heat for 20 minutes. Serve on a bed of rice and garnish with a good dollop of soured cream or crème fraîche. Enjoy!
